İsmini 12. yüzyılda ilk banisi olan ve Selçuklu alimlerinden Şeyh Şerâfeddin isimli bir zattan almaktadır. Kitabesi olmadığı için hangi tarihte yaptırıldığı kesin olarak bilinmemektedir. Camii önce II. Karamanoğlu İbrahim Bey tarafından 1244 yılında tamir ettirilmiş, daha sonra 1636 yılında Mehmed Çavuşoğlu Memi Bey tarafından bugünkü şekliyle yenilenmiştir. 1881 yılında bir kez daha Konya eşrafı ve hayırseverlerin katkılarıyla tamir edilen camii artık tamamen klâsik Osmanlı mimari tarzında görünmektedir.
