Tahmis, “kahvenin dövüldüğü yer” anlamına gelmektedir. Eski dönemlerde kahve, cevizden yapılan büyük dibeklerde, karataş ya da aynı ağaçtan imal edilen aletlerle dövülürmüş. Tarihi Tahmis Kahvesi Türkmen Ağası ve Sancak Beyi olan Mustafa Ağa tarafından Tekke’ye (Mevlevihane) gelir getirmesi amacıyla yaptırılmıştır. 1638 yılında yaptırılan Tahmis Kahvesi iki katlı, anılarla dolu bir yapıdır.
Kahve, dükkanlar ve han 1901-1903 tarihleri arasında iki büyük yangın esnasında tamamen yanmıştır. Bu tarihlerde mevlevihanede postnişinlik (mevlevihanenin şeyhi) yapan Feyzullahoğlu Şeyh Mehmet Münip Efendi, kendi cebinden 130 bin kuruş harcayarak Buğday Hanı’nı, Tahmis Kahvesi’ni ve 33 dükkânı yeniden yaptırarak Mevlevihane’ye 1904 yılında vakfetmiştir.
Bir rivayete göre 4. Murat’ın Bağdat Seferi sırasında burada dinlendiği ve kendisine Tahmis Kahvesi’nde kahve ikram edildiği söylentiler arasındadır.
